Christmas is around the corner!

Where has the year gone?? A very late post, I've been neglecting this blog haven't I?

It's been a busy week, prepping Gingerbread for the weekend's SSPCA Christmas Charity Bazaar; introducing a new item to the dessert menu at H.I.P. Cafe along with my regular bakes for other cafes.

December Special at HIP Cafe, the Apple Almond Frangipane- Slices of Granny Smith apples, a rich Almond filling, and caramelised Cinnamon Sugar. Absolutely comforting served with Vanilla ice cream!

An all-time favourite, the Lemon Meringue, also available at HIP.
(Changing up the meringue piping for some variety)

Soft Honey Gingerbread for the SSPCA Sale. All proceeds go towards the Animal Shelter so send those fur babies some love and buy a Gingerbread Boy (or Tree) ;D

And finally, a photo from a few weeks back: The White Rajah! Artwork by local artist Daphne Siaw, printed onto edible sheet and attached onto a fondant covered Chocolate Cake with White Chocolate frosting.

Up, Up & Away!

A Hot Air Balloon themed birthday cake, with a special request for Passionfruit flavour.

Quite unintentionally, the decor worked out to resemble a Smiley Face ;)

Hey Mickey! You're so fine, you blow my mind!

Fondant covered Red Velvet Cake. (Almost) Too cute to slice up :)

Down The Rabbit Hole...

...Soon her eye fell on a little glass box that was lying under the table: she opened it and found in it a very small cake, on which the words "EAT ME" were beautifully marked in currants. "Well, I'll eat it," said Alice...

I'm just slightly obsessed with everything Alice, so I was keen to attempt this Mad Hatter's theme cake (even though I was equal parts freaked out with working on another fondant cake!)

The Top Hat is constructed of layers of Red Velvet cake, accessorised with a gold pocket watch and roses. The Chocolate cupcakes (topped with a simple Vanilla Buttercream) were accented with other Alice inspired fondant decorations.

C is for Cookie!!

"ME WANT COOKIE!!" Chocolate Cake decorated with blue Vanilla Buttercream, flanked by chocolate cookies (OK, technically they are cream-filled biscuits and not cookies... details, details :P). Happy 3rd Birthday lil Ava xoxo

P is for Pingu The Penguin

If you never watched Pingu the Penguin as a child you have missed out on this cute lil fella and his delightful misadventures!

Cartoons and animations were so much more endearing back in the 80s (i'm giving my age away!), unlike the new re-imagined My Little Ponies, Smurfs and Ninja Turtles. Seriously, leave my childhood favourites alone!

Fondant covered Chocolate & Vanilla Buttercream cake, adorned with hand-crafted Pingu and Robbie :) Happy 3rd Birthday Marcus!

Close up of Pingu & Robbie. I wish I could keep you!

Updated pic with a few more details:

When Life Gives You Lemons...

Juice them, make a sinfully tangy, tongue-tingling zesty Lemon Curd and bake a Lemon Meringue Tart!

Lemon Meringue always reminds me of my Science tutor (yes, growing up I had a wonderful tutor who would reward us with Lemon Meringue after class! How's that for incentive?).

Vanilla pastry shell, Lemon curd and delicate pillows of toasted Meringue. Sunshine in each bite!

This beauty is available weekends at H.I.P. Cafe in the Spring Mall, so if you have a hankering for an afternoon pick-me-up treat you know where to go! ;)

Who doesn't love a little Bling? ;)

I normally don't agree to make fondant cakes, but when I got a request for a Crown Cake I couldn't say 'No' and what fun it was to create! I had been waiting for a chance to test out my Jewel molds to craft edible sugar gems.

Banana-Rama

Sinfully decadent Banoffee Tart- chocolate pastry shell, luscious banana toffee filling, little pillows of chantilly cream dusted off with cocoa.

Night & Day

Two cakes on the same day, a simple, clean, 'white' Birthday Carrot Cake, and a sinfully rich Dark Chocolate Ganache.

Rainbows and Unicorns

Hand crafted fondant Unicorn sitting pretty on top of a Passion Fruit Buttercream cake. Where's the rainbow? Inside the cake, as a surprise :)

Mango Tango

Layers of luscious Mango Mousse and chocolate sponge, balanced off with a tangy, fresh Passionfruit glaze.

For Mums & Dads

For Mother's Day, a Vanilla shortcrust tart filled with tangy, luscious Lemon-Passionfruit curd.

For Father's Day, Chocolate Cherry Mousse Gateaux: Chocolate sponge layers, Dark Chocolate (64%) Mousse infused with Cherry Brandy and pieces of plump dark cherries folded within.

On a Roll!

A seriously overdue update on some previous bakes!

Cinnamon Rolls have been a popular request of late, so here are a few pictures of them as individual rolls, as well as a Cinnamon Roll 'Birthday Cake'. These are Jaffa rolls, stuffed with Candied Citrus peel and shards of Dark Belgian Chocolate (64% cocoa).

I also had a request for Cake Pops. These were a Red Velvet pop, enrobed in Dark Chocolate. I have a soft spot for the rainbow coloured 100s and 1000s Pop. There's just something 'happy' about sprinkles :) it's like edible confetti, and screams "PARTY".

Easter Bakes Etc.

Nothing cheers me up as much as cinnamon-scented sweet bread fresh out of the oven. A spin on the traditional Hot Cross Bun, I made a Cranberry Citrus Peel version  laced with a blend of sweet spices and lacquered with a Citrus glaze. I may just make these year round, too yummy!

Customised Full Moon Cookies for a gorgeous baby girl! I'm currently obsessed with Cinnamon, so it's a Cinnamon Orange cookie decorated with fondant and royal icing.

More Red Velvets :) LAFB's signature cupcake.

You Can Never Have Too Much CHOCOLATE! :D

Fortunately Dark Chocolate is good for you! OK,maybe still not quite a health food, but I certainly feel less guilty indulging (yes, I am in denial).

4-inch mini Dark Chocolate Ganache Cake and Cupcakes

Dark Chocolate Cherry Mousse Cake: layers of chocolate sponge layers, dark chocolate mousse laced with cherry brandy and chunks of dark cherries hidden within...

I'm Seeing RED this 2013!

Red Rooster Gingerbread cookies as Anniversary favours.

Red Velvet cupcakes adorned with little Hearts :) These are now available at Sarawak MueseumShop & Cafe. If you live in Kuching (or are visiting our little city), do pop by and check out this quaint little cafe that also sells handmade crafts and literature about Sarawak.

Ooops! Very Belated Xmas Post!

Wow~ I've been so tied up with life that I had completely forgotten to update this site since early December! My bad!

So, Christmas has come and passed, and here are some pictures of the Xmas Gingerbread Cookies whipped up for the season.
