It's a bittersweet feeling now that I've come to the completion of my Patisserie course... Glad for what I've learnt during the year, of what I've managed to accomplish, for the people I've met along the way. My deepest gratitude to our amazing Chef instructors/tutors who made each class fun, interesting and so enjoyable! It was a little sad emptying out my locker, knowing I'd probably not be seeing our Patisserie kitchen again (unless of course I return for Year 2 to complete the Diploma ;) Hmmm).
Anyway, with all assessments behind us it was time to focus our efforts on our 'Festive Celebrations' themed Year End Buffet...

Just realised I had forgotten to post up pix from our Shop production module. Following our Professional Experience/Placement we're back in Uni again, but instead of our regular classes we're stocking up the Uni cafe with gateaus and pastries for 2 weeks! Here's a sample of some of the items we produced:

The second half of Semester 2 has commenced and we're now moving into Hot Desserts and how to plate them up attractively. Decor/Finishing is left mostly to our own 'creative interpretation' and we make use of whatever serveware and mis en place that's available (fruits, sauces etc). So here's some of the stuff we made this week:-

Banana and Apple beignets with Creme Patisserie sauce and Chocolate Coconut Cream

Poached Pears, dried apricots and figs with a White Wine Sabayon sauce

Part of our Course included 2 weeks of Work Experience in a Bakery/Cafe/Cake shop to give us a little teaser of what's instore for us if we do continue with our dreams (delusions?) of being a Pastry Chef. I think we were all a little nervous- would I love it? Hate it? What if I'm not cut out for life in a patisserie kitchen? I hope I'm not completely incompetent! Ahhh! What if the employer doesn't like me?!

Anyways, we're each assigned to a business, selected by our tutors based on whom they think would be a good fit. And i got placed into The Little Cake Kitchen, which was exactly the type of business i was hoping for- a small cafe that specialises in little cupcakes and such :) Very girly, dainty and so damn cute!

Just some of the yummy things they make. From scratch. Every day. I was a little sad on the last day, having met such kind, sweet people at the Cake Kitchen. But now i know where to go for the most delicious Red Velvet cupcakes when the craving arises! :)

Just concluded my Practical Assessment for Breads tonight! Looking forward to passing out and sleeping soundly without any more nightmares of forgetting yeast in my dough/dough that refuses to knead! To cap off our last few classes:-

Savarins- this dough is quite bizarre. You'd never think anything could be made with it! It has the consistency of gooey ectoplasm (the kind that was sold in plastic tubs, as marketed by the Ghost Busters cartoons :P). They're piped into donut shaped moulds, baked, soaked in a citrus rum syrup, glazed with apricot jam then filled with cream and fruit. Eating it, it seems like a dense, soggy donut :P

Brioche. Nuff said.

Danishes and Croissants (i stuffed mine with chocolate ;D)

More Danishes...

Quickbread, made with baking powder instead of yeast. Once you've had bread made with yeast, this type of bread just feels wrong in your mouth... It's meant to be bread, but feels like a muffin of some sort.

Irish Soda Bread. This also had a crumblier texture... but went well with Tomato Soup!

Buttermilk scones. Love. I just ate one before typing this all out!

Finally, today's Assessment: Dinner Rolls (Round and Bridge); Savarins; and Scones. DONE!!!

Leaving our Lean Breads behind and forging on with Enriched (ie FAT laden) Breads, here's where it really gets naughty ;) Sugar, Spice and every thing nice and calorific gets tossed into the dough.

Hot Cross Buns! Seeing I didn't get any this Easter I'm chuffed we made these :)

Plaited Zopf Bread. I imagine this would make an awesome French Toast for brekkie tomorrow

or transformed into Bread Pudding Mmmmm...

Donuts!! Deep-fried pillows of Happiness rolled into delectable Cinnamon Sugar.

Let Them Eat Bread! Pt 1

It's back to class, and straight back into the ovens! Been busy kneading, and kneading, and kneading until my shoulders feel like they're dislocated! I should have pretty toned arms by the end of this paper- but probably a lot LESS toned around my gut from OD'ing on carbs day in and out :P Bread is my kryptonite. Whilst I can easily turn down a slice of cake or choc chip cookie, I could inhale a loaf of bread in one sitting. It's been known to happen. More than once...

At the end of each paper we're required to produce 3 items during a three and a half hour practical asessment. Here's what's been produced for our Pastries; Cakes; and Sponges, Gateau and Torten papers over the course of the Semester.

Pastries: Fruit flan with custard cream filling and decorated with sliced peaches; Savoury petit four sale; Cream-filled Choux buns

Cakes: Piped Meringues; Madiera cake; Chocolate Hazelnut Gugelhopf

More sponge cakes... My Chocolate Hazelnut Torte with hazelnut praline buttercream. We get to decide how we'd like to decorate our cakes today- so i went for modern and simple with choc decor and toasted hazelnuts.

Some of the cakes churned out by the class:

Mary Vetsera Gateaux. Mary Vetsera was the mistress of the Crown Prince of Austria, and both were found killed under mysterious circumstances... OOoh the scandal! But anyhoo, back to the cake: Layers of dacqoise (nut meringue) between layers of Cointreau Ganache and covered in crushed nougatine/croquant.

Concorde Gateaux: Chocolate Walnut sponge sandwiched between Kahlua Ganache and decorated with chocolate meringue fingers.

Our first sponge cake: Mimosa Gateaux. Vanilla sponge with strawberry jam, Kirsch cream and toasted Genoise cubes
Cross-section:-

Black Forest Torte: Chocolate sponge, sour cherry jam and chocolate cream filling, Kirsch cream and chocolate shavings

Princess Torte: Almond Genoise, Grand Marnier Diplomat cream, fashioned into a half-dome and covered in green Marzipa. Yes, GREEN. That's how it's traditionally presented! And despite looking like a turtle, it tasted REALLY good! Pleasantly surprised :)

Cakes, Cakes and more Cakes!

Where did the month go? Back from Easter break and it was full steam ahead into the Cake paper. Here's what I've learnt over the past few weeks :) It takes will power when you're constantly surrounded by freshly made goodies- Give me strength!

Chocolate Hazelnut Gugelhopf. Crazy name, and crazy delicious! Ground roasted hazelnuts and almonds folded into a meringue batter then covered with chocolate. This was very popular at the dinner table that night :)

From 12 o'clock: Angel Food cake (no fat! :P); Banana cake with Chocolate frosting; Carrot cake with Cream Cheese frosting; Gateau Basque (almond flavoured cake with a baked custard centre); and Flourless Chocolate cake (gluten free). And yes, i tried them all... and i still love banana best :)

My decorated fruit cake! Brandy soaked fruit cake covered with almond paste and rolled fondant, and adorned with hand crafted fondant roses! Time-consuming (2.5hrs for 7 flowers!), and yet so fun and satisfying :D Will definately need to put more time aside for more practice.

The Chocolate Divinity Cake, with hand made White Choc Waterlillies. Looks very elegant, no? Also extremely delectable. I could eat this every day. And i did :P To ease my guilt i did share the calories amongst a few others...

With assessment week finally behind we step right up into Gateau and Torten, so stay tuned!

Moving onto the next Paper

So, 'Pastries' are over and done with. We're moving onto Cakes and Christmas baking in this next paper. Yup- Xmas bakes in April! I suppose Easter is the closest thing to Xmas... But in any case, it doesn't bother me because I LOOOOVE Xmas goodies and could eat Gingerbread and Cinnamon Stars all year long :)~ What i've been learning the past 2 weeks:- Meringues. Self-control is needed. I ate the last one today- not too bad i made them last 2weeks!

New Zealand's claim to culinary fame. Pavlovas, with Passionfruit Cream and Raspberries. Yummms..

Lekerli (also known as Basler Gingerbread). This is one of my top favourites so far in this course. Resistance is futile... Almonds, hazelnuts, orange peel all balanced off by a dark chocolate layer. This lasted only 3 days in the pantry. So good, so evil.

An assortment of traditional Christmas cookies: Spekulatis, Brunsli, Cinammon Moons, Springerle, Mailanderli

My Ginger breadhouse!! I had so much fun decorating it. Almost a shame to rip it apart and eat it. Almost. Nom, nom, nom... (well, I DIDN'T actually eat this- but I'm sure the kids at tomorrow's birthday party will enjoy tearing it apart!).

Pastries pt.2

The Pastries paper has concluded, and here are some of the items produced: continuing on from Puff Pastries and onto Choux. Puff pastries, hand-made using the French method. Front to back: Mielle Fuille with fondant icing; Cream horns silled with Grand Marnier Diplomat cream; Shoe soles (stacked); Fruit Vol Au Vents; and Palmiers

Apple Turnovers, made using the Scotch method

Choux buns (cream puffs) and Chocolate eclairs

Choux Swans and Paris Brest filled with Chocolate Cream and almond croquant (my favourite of all the Choux pastries!)

So it's goodbye to Pastries as we move onto the Cakes module tomorrow :)

Back to School!

7 years after graduating with a BCS, it's back to my old Uni, but this time for a Certificate course in Patisserie. And i'm quite relieved to discover I'm not the only mature student in my class- phew! Week 3 has come to an end and so far we've been focussed solely on Pastries (Short paste, Sweet paste & Puff paste. Choux paste is next week's topic). Who knew there was so much science and theory involded in pastry? And that Pastries were such 'sensitive' creatures? They can't take warm weather, and they are rather delicate- needing to rest frequently! As the end of my first month draws closer, I thought I'd share some photos of the goodies we've been churning out of the kitchen (and making the 7hr classes worthwhile). Things have been pretty busy over the past few months, and it's been a while since I last posted.

Regretably, LAFB will not be able to accept any orders for 2011- as i'll be putting on my Chef's apron and attending a Patisserie course!
